Would you suggest hiring a repossession company ourselves?

Yes

f the matter goes to court to get a court order will she be notified?

Yes, she has to be notified. Better to just repossess your car. If you do not have a key, get one from the dealer. Cheaper than paying a lawyer.

Just checking. She is still the registered owner of the car?

Stop paying. Sure your credit rating will take a hit. But you will recover.
OR keep paying. Eventually you will have paid off the loan, she will sell the car and keep the $.

Just outa interest what sort of $$$ are you talking here?

registered owner

Please do not use this term, it misleads people. In Victoria you can be owner or registered operator. Oftentimes a person is both.

The OP is the owner, someone else (either ex or her new partner) is the registered operator.
