Although now irrelevant from further information, I was saying it could have been a one off delivery and still made economic sense. If I'm going from point A to point B anyway, I can still go and take item C with me for reward; at a price which wouldn't make sense if the delivery was the only reason for going (because I'm going anyway).

All these questions is a very heavy proposition for a scenario which is effectively hearsay - you weren't there and don't know what actually happened. All you know is what you've been told happened. Maybe the roof rack broke, maybe it wasn't properly attached, maybe there was a sudden unexpected gust of wind, maybe he just kept the board and said it got lost....

I would think it would be more relevant to establish:
- You had a contract for him to deliver the board;
- He failed to complete the contract; and
- You've suffered loss as a consequence of that failure.

Leave it up to him to prove what happened and why he thinks this makes him not liable for the loss.
