NSW Write a book using insights from online survey

Hi,

I want to write a book about the differences in the way of living between Australian and French people. I plan to sell the book - if I find a publisher.
I have a first list of topics that I wrote, and I’d like to publish a free online survey to ask people their views on this.
Can I use the insights / quotes from the survey for my book?
