VIC Unpaid Wages. How can I get my pay and holiday entitlement from a job I have left

hi I have recently resigned from my job after continuously having to chase my pay for 2 months. Now that I have left I am still chasing my last weeks wage and holiday pay out.
After numerous attempts of asking to be paid (all in writing) what other action can I take against this employer?

Send a final demand letter stating you must be paid in full within the next 7 days else you'll commence legal action to recover the monies owed, plus civil penalties and legal costs expended in attempting to recover the money owed.

Post back here after the 7 day period expires if that doesn't work.

Please try fair Work ombudsman. They should pay out once they see the fair work bomb.
