I have recently separated from my girlfriend and when we were together I took out a loan in my name so she could have a car.

I'm also paying insurance on it as well.

What is the best thing to do moving forward as I don't want to be paying this car off as we are no longer together.

Tell her to refinance the car in her name or take back possession. Not sure who it is registered to, but either way you are at risk the longer you leave the loan in your name, or the car in her possession.
