Can you insist on seeing a removed supermarket tag, after believing that you were overcharged under Australian Consumer Law?

Yes. Do they have to produce the tag, no. Can you ask for money back, yes. Dispute over a key contract term (ie price) can void the contract (ie purchase). Goods have to be in the same condition as when purchased.
